Ingredients
For the Vada :
4 large potatoes, boiled and mashed
2 tablespoons oil
1 teaspoon mustard seeds
1/2 teaspoon asafoetida (hing)
8-10 curry leaves
2-3 green chilies, finely chopped
1/2 teaspoon turmeric powder
Salt to taste
2 tablespoons fresh coriander, finely chopped
1 cup gram flour (besan)
Water for batter
Oil for deep frying
For Assembling :
4-6 pav (Indian bread buns)
Dry garlic chutney
Green chutney (optional)
Fried green chilies
Instructions
Prepare the Potato Filling:
In a pan, heat oil and add mustard seeds. Once they splutter, add asafoetida, curry leaves, and green chilies.
Add turmeric powder and mashed potatoes. Mix well.
Season with salt and mix in chopped coriander. Set aside to cool.
Once cooled, form into small, lemon-sized balls.
Make the Batter:
In a bowl, mix gram flour, salt, and water to form a thick, smooth batter.
Fry the Vadas:
Heat oil in a deep frying pan.
Dip each potato ball into the batter, ensuring it's well coated, and deep fry until golden brown.
Drain on kitchen paper.
Assemble the Vadapav:
Slit the pav halfway through and spread some dry garlic chutney inside.
Place a hot vada inside each pav.
Serve immediately with fried green chilies and green chutney.
