Ingredients:
For the Pakoras
1 cup gram flour (besan)
1 small onion, finely chopped
2 green chilies, finely chopped
½ teaspoon cumin seeds
½ teaspoon red chili powder
¼ teaspoon turmeric powder
Salt to taste
Water, as needed
Oil for deep frying
For the Kadhi (Yogurt Curry)
1 ½ cups yogurt (preferably slightly sour)
¼ cup gram flour (besan)
1 teaspoon turmeric powder
1 teaspoon red chili powder
½ teaspoon coriander powder
Salt to taste
4 cups water
1 tablespoon oil or ghee
1 teaspoon mustard seeds
1 teaspoon cumin seeds
1 dried red chili
8-10 curry leaves
2-3 cloves garlic, chopped
1-inch piece ginger, grated
1 small onion, sliced
Fresh coriander leaves for garnish
Instructions:
1. Prepare the Pakoras
In a mixing bowl, add gram flour, chopped onion, green chilies, cumin seeds, red chili powder, turmeric powder, and salt.
Slowly add water and mix to form a thick, lump-free batter.
Heat oil in a deep-frying pan over medium heat.
Drop small spoonfuls of the batter into the hot oil and fry until the pakoras are golden and crisp on all sides.
Remove and drain on a paper towel. Set aside.
2. Prepare the Kadhi
In a large mixing bowl, whisk together yogurt, gram flour, turmeric, red chili powder, coriander powder, and salt.
Gradually add 4 cups of water, stirring constantly to avoid lumps. Whisk until smooth.
In a large pan, heat 1 tablespoon of oil or ghee.
Add mustard seeds and cumin seeds, and let them splutter.
Add the dried red chili, curry leaves, chopped garlic, grated ginger, and sliced onion. Sauté until the onions are soft and translucent.
Pour in the yogurt-besan mixture and bring it to a boil, stirring continuously to prevent it from curdling.
Once it boils, lower the heat and let it simmer for about 20-25 minutes, stirring occasionally until the kadhi thickens slightly.
3. Add Pakoras to the Kadhi
Gently drop the fried pakoras into the simmering kadhi.
Let the pakoras soak in the kadhi for about 5-10 minutes before serving.
4. Garnish and Serve
Garnish the Kadhi Pakora with freshly chopped coriander leaves.
Serve hot with steamed rice or chapati.
