Ingredients:
For the Dough
2 cups whole wheat flour (atta)
1 teaspoon salt
1 tablespoon oil or ghee
Water as needed
For the Spinach Filling
2 cups fresh spinach leaves (palak), finely chopped
1 small onion, finely chopped
2-3 green chilies, finely chopped
1 teaspoon cumin seeds
1 teaspoon ginger-garlic paste
½ teaspoon red chili powder
½ teaspoon turmeric powder
½ teaspoon garam masala
1 tablespoon oil for sautéing
Salt to taste
For Cooking
Ghee or oil for roasting
Instructions:
1. Prepare the Dough
In a mixing bowl, add the whole wheat flour, salt, and oil.
Gradually add water and knead the mixture into a soft and pliable dough. The dough should not be too hard or sticky.
Cover the dough with a damp cloth and let it rest for 15-20 minutes.
2. Prepare the Spinach Filling
Heat 1 tablespoon oil in a pan over medium heat.
Add cumin seeds and let them splutter.
Add chopped onions, green chilies, and ginger-garlic paste. Sauté until the onions turn golden brown.
Stir in the chopped spinach leaves, red chili powder, turmeric powder, garam masala, and salt.
Cook for 3-4 minutes, stirring occasionally until the spinach wilts and any excess moisture evaporates. Set the filling aside to cool.
3. Assemble the Parathas
Divide the dough into equal-sized balls, roughly the size of a lemon.
Take one dough ball and roll it out into a small circle using a rolling pin.
Place a spoonful of the spinach filling in the center of the rolled dough.
Bring the edges of the dough together and pinch to seal the filling inside.
Gently flatten the stuffed dough ball with your fingers and roll it out into a larger circle, around 6-7 inches in diameter. Be careful not to press too hard to avoid the filling spilling out.
4. Cook the Parathas
Heat a tawa or griddle over medium heat.
Place the rolled paratha on the hot tawa and cook for 30 seconds or until small bubbles start forming.
Flip the paratha and apply a small amount of ghee or oil on the top side. Press gently with a spatula.
Flip again and apply ghee or oil to the other side. Cook until both sides are golden brown and crispy.
Repeat the process with the remaining dough and filling.
5. Serve
Serve the hot Palak Parathas with a dollop of butter on top.
Pair with yogurt, pickle, or your favorite chutney for a delicious and wholesome meal.
