Ingredients:
For the Dough
2 cups whole wheat flour (atta)
1 teaspoon salt
1 tablespoon oil or ghee
Water as needed
For the Paneer Filling
1 cup paneer (cottage cheese), crumbled
1 small onion, finely chopped
2 green chilies, finely chopped
1 teaspoon cumin seeds
1 teaspoon red chili powder
½ teaspoon turmeric powder
½ teaspoon garam masala
1 tablespoon fresh coriander leaves, chopped
½ teaspoon dried fenugreek leaves (kasuri methi) (optional)
Salt to taste
1 tablespoon oil for sautéing
For Cooking
Ghee or oil for roasting
Instructions:
1. Prepare the Dough
In a large mixing bowl, combine the whole wheat flour, salt, and oil.
Gradually add water and knead the dough into a smooth, pliable consistency. The dough should be soft but not sticky.
Cover the dough with a damp cloth and let it rest for 15-20 minutes.
2. Prepare the Paneer Filling
Heat 1 tablespoon of oil in a pan over medium heat.
Add cumin seeds and let them splutter.
Add the chopped onion and green chilies, sautéing until the onions turn golden brown.
Add the crumbled paneer, red chili powder, turmeric, garam masala, kasuri methi (if using), and salt. Mix well and cook for 2-3 minutes.
Stir in the fresh coriander leaves and cook for another minute. Remove from heat and let the filling cool completely.
3. Assemble the Parathas
Divide the dough into equal-sized balls, about the size of a lemon.
Take one dough ball and roll it out into a small circle using a rolling pin.
Place a spoonful of the paneer filling in the center of the rolled dough.
Bring the edges of the dough together and pinch to seal the filling inside.
Gently flatten the stuffed dough ball with your fingers and roll it out into a larger circle, about 6-7 inches in diameter. Be careful not to press too hard to prevent the filling from spilling out.
4. Cook the Parathas
Heat a tawa or flat pan over medium heat.
Place the rolled paratha on the hot tawa and cook for 30 seconds or until small bubbles form.
Flip the paratha and apply ghee or oil on the top side. Press gently with a spatula.
Flip again and apply ghee or oil to the other side. Cook until both sides are golden brown and crispy.
Repeat with the remaining dough and filling.
5. Serve
Serve hot Paneer Parathas with a dollop of butter on top.
Pair with yogurt, pickle, or a spicy chutney for a wholesome meal.
