Ingredients:
500g boneless chicken thighs or breasts (thighs are more tender)
3 tablespoons plain yogurt
2 tablespoons lemon juice
3 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon smoked paprika
1 teaspoon ground turmeric
½ teaspoon ground cinnamon
½ teaspoon ground black pepper
¼ teaspoon cayenne pepper (optional, for extra spice)
Salt to taste
2 tablespoons olive oil
For the Shawarma Sauce
½ cup plain Greek yogurt
2 tablespoons tahini (optional)
2 tablespoons lemon juice
2 garlic cloves, minced
Salt and pepper to taste
A pinch of cumin
For the Shawarma Wrap
Pita bread or flatbread
Fresh lettuce, shredded
Cucumber slices
Tomato slices
Onion rings
Pickled turnips (optional)
Fresh parsley or mint (optional)
Instructions:
Marinate the Chicken
In a large mixing bowl, combine the yogurt, lemon juice, minced garlic, olive oil, and all the spices: cumin, coriander, paprika, turmeric, cinnamon, black pepper, cayenne pepper (if using), and salt.
Add the chicken pieces to the marinade and coat them evenly.
Cover the bowl and refrigerate for at least 2 hours, preferably overnight, to allow the flavors to fully penetrate the chicken.
Cook the Chicken
Preheat your grill or stovetop pan over medium-high heat.
Remove the chicken from the marinade and cook the pieces for about 5-6 minutes on each side, or until the chicken is cooked through and nicely charred on the edges.
Once cooked, let the chicken rest for a few minutes, then slice it into thin strips.
Prepare the Shawarma Sauce
In a small bowl, mix the Greek yogurt, tahini (if using), lemon juice, minced garlic, cumin, salt, and pepper. Stir well to combine.
