Ingredients:
For the Bread
4-6 slices of bread (white or brioche)
1/2 cup ghee (clarified butter) for frying
1/4 cup sugar (for sugar syrup)
1/2 cup water (for sugar syrup)
A few drops of rose water (optional)
For the Milk Mixture
2 cups full-fat milk
1/2 cup condensed milk
1/2 teaspoon cardamom powder
A pinch of saffron strands (soaked in 1 tablespoon warm milk)
1/4 cup chopped nuts (almonds and pistachios)
For Garnishing
Additional chopped nuts
Silver or gold leaf (optional)
A sprinkle of ground cardamom
Instructions:
Prepare the Sugar Syrup
In a small saucepan, combine the sugar and water. Heat over medium heat, stirring until the sugar dissolves completely.
Once it reaches a boil, reduce the heat and let it simmer for 5 minutes. Add rose water if using. Remove from heat and set aside to cool.
Fry the Bread
Cut the bread slices into halves or quarters, depending on your preference.
In a large frying pan, heat ghee over medium heat. Once hot, add the bread pieces and fry until they turn golden brown on both sides. Remove and drain on paper towels to remove excess ghee.
Prepare the Milk Mixture
In another saucepan, bring the full-fat milk to a boil. Reduce the heat and let it simmer for about 10-15 minutes until it thickens slightly.
Stir in the condensed milk, cardamom powder, saffron milk, and half of the chopped nuts. Cook for another 2-3 minutes, then remove from heat.
Assemble the Shahi Tukda
Take each fried bread piece and soak it in the sugar syrup for a few seconds, allowing them to absorb the sweetness but not become too soggy.
Place the soaked bread on a serving plate, layering them as desired.
Add the Milk Mixture
Pour the warm milk mixture over the soaked bread, ensuring even coverage. Allow it to soak for a few minutes.
Garnish and Serve
Garnish with the remaining chopped nuts, a sprinkle of ground cardamom, and, if desired, silver or gold leaf for an extravagant touch.
Serve warm or at room temperature as a delightful dessert.
Tips:
For a richer flavor, you can add a bit of khoya (reduced milk) to the milk mixture.
Adjust the sweetness of the milk mixture according to your taste.
Shahi Tukda can be made ahead of time and refrigerated; just reheat before serving.
