Ingredients:
Tomatoes 4-5 medium-sized, chopped
Sev 1 cup (use fine or thick sev, as per your preference)
Onion (optional) 1 small, finely chopped
Green Chilies 2, finely chopped
Ginger 1-inch piece, grated
Garlic (optional) 3-4 cloves, minced
Cumin Seeds 1 teaspoon
Mustard Seeds 1 teaspoon
Turmeric Powder ½ teaspoon
Coriander Powder 1 teaspoon
Red Chili Powder 1 teaspoon
Garam Masala ½ teaspoon
Jaggery or Sugar 1 teaspoon
Lemon Juice 1 tablespoon
Oil 2 tablespoons
Water ½ cup
Salt To taste
Fresh Coriander Leaves For garnish
Instructions:
Prepare the Tomato Curry
Heat oil in a pan on medium heat. Add cumin seeds and mustard seeds. Let them splutter.
If using onions and garlic, sauté the onions until they become translucent, then add garlic and ginger. Sauté for a minute.
Add chopped green chilies and tomatoes. Stir well and cook the tomatoes until they become soft and mushy (about 5-7 minutes).
Add turmeric, coriander powder, red chili powder, and salt. Stir to combine and cook for 2-3 minutes to allow the spices to blend with the tomatoes.
Add ½ cup of water to adjust the consistency. Let the curry simmer for 5-6 minutes until it thickens slightly.
Add Sweetness and Flavor
Add jaggery or sugar to balance the tanginess of the tomatoes. Let it melt into the curry, stirring occasionally.
Add garam masala and cook for another 2 minutes. Turn off the heat and squeeze in some lemon juice for a fresh zing.
Serving and Garnishing
Just before serving, sprinkle a generous amount of sev over the tomato curry. Be sure to add the sev only right before serving, as it can become soggy if left in the curry for too long.
Garnish with fresh coriander leaves for a burst of color and freshness.
Serving Suggestions
Sev Tameta Nu Shaak is best served hot with soft rotis, bajra bhakris, or even as a side with steamed rice.
For extra crunch, you can also serve additional sev on the side so that everyone can sprinkle more as they eat.
