Ingredients:
500 grams Suran (yam), peeled and cubed
2 tablespoons oil (mustard or vegetable oil)
1 teaspoon cumin seeds
1 teaspoon mustard seeds
1 medium onion, finely chopped
2-3 green chilies, slit
1 teaspoon ginger-garlic paste
1/2 teaspoon turmeric powder
1 teaspoon red chili powder (adjust to taste)
1 teaspoon coriander powder
Salt to taste
1 tablespoon lemon juice
Fresh coriander leaves for garnish
Instructions:
Preparation of Yam
Start by peeling the Suran (yam) and cutting it into bite-sized cubes. Rinse the cubes under cold water to remove any excess starch. Soak them in water for about 10-15 minutes to prevent browning and to soften them slightly.
Cooking the Spices
In a pan or kadhai, heat the oil over medium heat. Once hot, add the cumin seeds and mustard seeds. Allow them to splutter for a few seconds, releasing their flavors.
Sautéing Onions and Chilies
Add the finely chopped onions to the pan and sauté until they turn translucent. Then, add the slit green chilies and ginger-garlic paste. Cook for another 2-3 minutes until the raw smell of garlic disappears.
Adding Spices
Mix in the turmeric powder, red chili powder, coriander powder, and salt. Stir well to combine the spices with the onion mixture. Cook for about a minute to toast the spices.
Cooking the Yam
Add the cubed Suran to the pan. Stir to coat the yam pieces evenly with the spice mixture. Cook for about 5-7 minutes, stirring occasionally, until the yam starts to soften.
Cover and Cook
Cover the pan with a lid and reduce the heat to low. Let it cook for another 10-15 minutes until the yam is tender. If needed, add a splash of water to prevent it from sticking to the pan.
Finishing Touches
Once the Suran is cooked through, check for seasoning and adjust salt or spices if necessary. Drizzle the lemon juice over the sabji and mix well.
Garnishing
Remove the pan from heat. Garnish with freshly chopped coriander leaves before serving.
Serving Suggestions: Suran Sabji can be enjoyed hot with Indian flatbreads like roti, paratha, or puri. It pairs well with dal (lentils) and rice, making it a wholesome meal.
