Ingredients:
For the Dough
2 cups all-purpose flour (maida)
1/4 cup oil or ghee
1/2 teaspoon salt
Water (as needed)

1 cup grated fresh coconut
1/2 cup jaggery (grated or powdered)
1/4 cup mixed nuts (cashews, almonds, and pistachios), chopped
1/2 teaspoon cardamom powder
1 tablespoon poppy seeds (optional)
A pinch of salt

Instructions:
Prepare the Dough
In a mixing bowl, combine the all-purpose flour and salt.
Add the oil or ghee and mix well until the mixture resembles breadcrumbs.
Gradually add water and knead to form a smooth and soft dough. Cover it with a damp cloth and let it rest for about 30 minutes.
Make the Filling
In a pan, add the grated coconut and jaggery over low heat. Stir continuously until the jaggery melts and combines with the coconut.
Add the chopped nuts, cardamom powder, poppy seeds (if using), and a pinch of salt. Mix well and cook for an additional 2-3 minutes until the mixture is dry. Remove from heat and let it cool.
Shape the Ghooghra
Divide the dough into small balls (about the size of a golf ball).
Roll each ball into a small circle (about 4-5 inches in diameter).
Place a tablespoon of the coconut filling in the center of the circle.
Fold the dough over the filling to form a half-moon shape and press the edges together to seal. You can crimp the edges with your fingers or use a fork for decoration.
Fry the Ghooghra
Heat oil in a deep-frying pan over medium heat.
Carefully drop the Ghooghra into the hot oil, a few at a time. Fry until they turn golden brown and crispy on both sides.
Remove them from the oil and drain on paper towels to absorb excess oil.
Serve
