Ingredients:
For the Dhokla
1 cup gram flour (besan)
1/2 teaspoon turmeric powder
1 teaspoon Eno fruit salt (or baking soda)
1 tablespoon lemon juice
Salt to taste
1 cup water
1 tablespoon oil (for greasing the steaming tray)
For the Dabeli Filling
2 medium potatoes, boiled and mashed
1/4 cup pomegranate seeds
1 small onion, finely chopped
2 tablespoons roasted peanuts, crushed
2 tablespoons coriander leaves, finely chopped
1-2 green chilies, finely chopped
1 tablespoon Dabeli masala (available in stores or homemade)
Salt to taste
1 tablespoon tamarind chutney
1 tablespoon green chutney
For Garnish
Chopped coriander leaves
Sev (crispy chickpea noodles)
Extra pomegranate seeds
Lemon wedges
Instructions:
Prepare the Dhokla Batter
In a mixing bowl, combine gram flour, turmeric powder, and salt. Mix well.
Gradually add water to form a smooth batter. It should be pourable but not too runny.
Stir in lemon juice and Eno fruit salt. Mix gently until bubbles form.
Steam the Dhokla
Grease a steaming tray or a flat plate with oil.
Pour the batter into the tray and spread it evenly.
Place the tray in a steamer or a large pot with boiling water. Cover and steam for about 15-20 minutes or until a toothpick inserted comes out clean.
Once cooked, remove the tray and let it cool for a few minutes before cutting it into squares.
Prepare the Dabeli Filling
In a bowl, mix the mashed potatoes with Dabeli masala, salt, green chilies, and a tablespoon of tamarind chutney. Adjust seasoning as needed.
Add pomegranate seeds, crushed peanuts, chopped onions, and coriander leaves to the mixture. Mix well.
Assemble the Dabeli Dhokla
Take a dhokla square and place a generous amount of the Dabeli filling on top.
Drizzle with green chutney and a bit more tamarind chutney.
Top with sev and extra pomegranate seeds for crunch and flavor.
Serve
Serve the Dabeli Dhokla warm or at room temperature, garnished with chopped coriander leaves and lemon wedges on the side.
