Ingredients:
For the Dough
2 cups whole wheat flour
1/2 teaspoon salt
Water (as needed)
For the Sattu Stuffing
1 cup sattu (roasted chickpea flour)
1 small onion, finely chopped
2 green chilies, finely chopped
1 tablespoon ginger, grated
2-3 garlic cloves, minced
2 tablespoons fresh coriander leaves, chopped
1/2 teaspoon ajwain (carom seeds)
1/2 teaspoon kalonji (nigella seeds)
1 teaspoon mustard oil (for authentic flavor)
Salt, to taste
1/2 teaspoon amchur (dry mango powder) or juice of half a lemon
For Cooking
Ghee or oil, for roasting
Instructions:
Prepare the Dough
In a large bowl, mix the whole wheat flour and salt.
Gradually add water, kneading to make a soft and pliable dough.
Cover the dough with a damp cloth and set it aside for 15-20 minutes.
Prepare the Sattu Stuffing
In a mixing bowl, combine sattu, chopped onion, green chilies, ginger, garlic, and fresh coriander.
Add ajwain, kalonji, mustard oil, salt, and amchur powder or lemon juice.
Mix everything well, ensuring the stuffing is flavorful and slightly moist. If it's too dry, sprinkle a few drops of water to make it easier to stuff.
Assemble the Parathas
Divide the dough into equal-sized balls and the sattu stuffing into smaller portions.
Take one dough ball and roll it out into a small circle.
Place a portion of the stuffing in the center, then bring the edges together to seal the filling inside.
Gently press down and roll the stuffed dough ball into a thick, round paratha. Be careful to avoid tearing.
Cook the Parathas
Heat a tawa (flat griddle) on medium heat. Place the rolled paratha on it.
After a minute, flip the paratha and apply a little ghee or oil on the surface.
Flip again and apply ghee on the other side. Press down gently with a spatula and cook until golden brown spots appear on both sides.
Repeat for all parathas.
Serve
Serve the hot sattu parathas with green chutney, yogurt, and pickle. They’re perfect for breakfast, lunch, or a cozy dinner.
