Ingredients:
For the Dough
2 cups all-purpose flour (maida)
2 tbsp clarified butter (ghee)
1/2 tsp salt
Water (as needed)
For the Sugar Syrup
1 cup sugar
1/2 cup water
1/4 tsp cardamom powder
A few saffron strands (optional)
For Layering
3 tbsp clarified butter (ghee)
2 tbsp rice flour (for a crispy texture)
For Frying
Oil or ghee
Instructions:
Prepare the Dough
Mix Dry Ingredients: In a large mixing bowl, combine the all-purpose flour and salt.
Add Ghee: Pour in 2 tablespoons of ghee and mix until the flour resembles coarse crumbs.
Knead the Dough: Gradually add water and knead into a firm dough. Cover the dough with a damp cloth and let it rest for 20-30 minutes.
Make the Sugar Syrup
Combine Ingredients: In a small saucepan, combine sugar and water, stirring occasionally until the sugar dissolves.
Add Flavoring: Once it reaches a one-string consistency, add cardamom powder and saffron strands. Turn off the heat and set aside.
Roll and Layer the Dough
Divide the Dough: Divide the dough into 4 equal portions.
Roll Out: Roll each portion into a thin, large circle (around 1/8-inch thick).
Layer with Ghee and Rice Flour: Spread a light layer of ghee on one circle, sprinkle rice flour, and place the next rolled dough on top. Repeat the layering process until all circles are stacked.
Form a Roll: Roll the stacked circles into a tight log.
Cut into Pieces: Cut the log into 1-inch pieces and gently flatten each piece with a rolling pin.
Fry the Khaja
Heat Oil/Ghee: Heat oil or ghee in a deep pan over medium heat.
Fry: Gently slide the flattened pieces into the oil and fry on medium heat until golden and crispy. This may take 5-6 minutes.
Drain Excess Oil: Remove the fried Khajas with a slotted spoon and place them on paper towels to absorb excess oil.
Coat with Sugar Syrup
Dip in Syrup: While the Khajas are still warm, dip each one into the sugar syrup for 10-15 seconds.
Allow to Set: Place the syrup-coated Khajas on a plate and let them cool, allowing the syrup to set and harden.
Serving
Serve your Khaja garnished with chopped pistachios or almonds for an extra touch of elegance. This treat pairs wonderfully with a cup of hot chai!
