Ingredients:
500 grams boneless chicken, cut into cubes
1 cup hung yogurt
1 medium onion, finely sliced and fried until golden brown
2 tablespoons ginger-garlic paste
2 tablespoons mustard oil
1 tablespoon lemon juice
1 teaspoon red chili powder
1/2 teaspoon turmeric powder
1 teaspoon cumin powder
1 teaspoon coriander powder
1 teaspoon garam masala powder
1/2 teaspoon black pepper powder
1/2 teaspoon nutmeg and mace powder
Salt to taste
Skewers (soaked in water if wooden)
Instructions:
Prepare the Marinade
In a mixing bowl, add hung yogurt, fried onions (crush them for a paste-like consistency), ginger-garlic paste, mustard oil, lemon juice, and all spices: red chili powder, turmeric powder, cumin powder, coriander powder, garam masala powder, black pepper powder, nutmeg, mace powder, and salt.
Mix everything well until the marinade is smooth.
Marinate the Chicken
Add the chicken cubes to the marinade, making sure each piece is well coated.
Cover the bowl and refrigerate for at least 4 hours, preferably overnight, for a deeper flavor.
Skewer and Grill
Thread the marinated chicken cubes onto skewers.
Preheat your grill or barbecue to medium-high heat.
Grill the chicken skewers, turning occasionally, until the chicken is cooked through and has a nice charred look on the edges. This should take about 12-15 minutes.
Alternative Cooking Method
If you don’t have a grill, you can cook the skewers in an oven. Preheat the oven to 200°C (400°F) and bake for 15-20 minutes, flipping halfway, until cooked and slightly charred.
Serve
Serve hot with naan or paratha, along with green chutney and sliced onions.
Tips:
For added smokiness, place a small piece of burning charcoal in a foil cup in the middle of the marinated chicken and cover it for a few minutes before cooking.
