Ingredients:
Rice Flour 2 cups
Urad Dal Flour (roasted black gram flour) 1/2 cup
Butter 2 tablespoons (softened)
Sesame Seeds 1 teaspoon
Cumin Seeds 1 teaspoon
Asafoetida (Hing) a pinch
Salt as per taste
Red Chili Powder 1/2 teaspoon (optional, for spice)
Water as needed (for the dough)
Cooking Oil for deep frying

Murukku press (with star or round nozzle)

Instructions:
Prepare the Dough
In a large mixing bowl, combine rice flour and urad dal flour.
Add sesame seeds, cumin seeds, asafoetida, salt, and red chili powder.
Incorporate the softened butter into the mixture. Rub it into the flour to achieve a crumbly texture.
Gradually add water to form a smooth, non-sticky dough. Knead well to ensure there are no lumps.
Shape the Murukku
Grease the inside of the murukku press with oil to prevent sticking.
Fill the press with a portion of the dough.
On a greased surface or parchment paper, press the dough to form spirals. Start from the center and move outward in a circular motion. Make 4–5 spirals at a time.
Heat the Oil
Heat the cooking oil in a deep-frying pan over medium heat.
To test if the oil is ready, drop a small piece of dough into it. If it rises to the surface with bubbles, the oil is hot enough.
Fry the Murukku
Carefully slide the shaped murukku into the hot oil. Avoid overcrowding the pan.
Fry on medium heat until golden brown and crisp. Flip occasionally for even cooking.
Remove the murukku using a slotted spoon and place them on a paper towel to drain excess oil.
Cool and Store
Allow the murukku to cool completely before storing it in an airtight container. This keeps them fresh and crunchy for weeks.
Tips:
If the dough is too dry and cracks while pressing, add a few drops of water and knead again.
Fry on medium heat; high heat can cause the murukku to brown quickly without cooking the inside.
Experiment with flavors by adding crushed curry leaves or garlic paste for variation.
