Ingredients:
Rice Flour 2 cups (finely ground, roasted)
Grated Coconut 1 cup (fresh)
Salt ½ tsp
Water ¾ cup (adjust as needed)
Puttu Maker A cylindrical or chiratta (coconut shell) steamer
Optional Side Dishes
Kadala Curry Spicy black chickpea curry
Bananas Ripe small bananas, for a sweet pairing
Jaggery Syrup To drizzle for added sweetness
Instructions:
Prepare the Rice Flour
Dry roast the rice flour on low flame for about 3-4 minutes. Stir constantly to ensure it does not brown. Allow it to cool completely.
Transfer the roasted rice flour to a mixing bowl and add salt.
Gradually sprinkle water into the rice flour and mix with your fingertips. The texture should resemble wet sand—moist enough to hold shape when pressed but crumble when disturbed.
Layer with Coconut
In the Puttu maker, start by adding a thin layer of grated coconut at the bottom.
Add a layer of the prepared rice flour mixture. Alternate between layers of coconut and rice flour until the cylinder is filled, finishing with a layer of coconut on top.
Steam the Puttu
Assemble the Puttu maker and attach it to the steamer base or pressure cooker spout (without the whistle).
Steam the Puttu on medium heat for about 5-7 minutes. The aroma of cooked rice flour will indicate it is done.
Carefully remove the Puttu from the cylinder using a skewer or by lightly tapping it onto a plate.
Tips for Serving:
Serve the warm Puttu with spicy Kadala Curry for a traditional combination.
For a sweet twist, enjoy it with banana slices and a drizzle of jaggery syrup.
You can also pair Puttu with fish curry or egg curry for a flavorful meal.
