Ingredients:
For Marination:
6-8 Bombil (Bombay duck) fish, cleaned and slit horizontally
1 tsp turmeric powder
2 tsp red chili powder
1 tbsp ginger-garlic paste
Juice of 1 lemon
Salt to taste
For the Coating:
1 cup rice flour
1/2 cup semolina (rava)
1 tsp carom seeds (ajwain)
Salt to taste
Additional:
Oil for shallow frying
Lemon wedges and chopped coriander for garnish
Instructions:
Prepare the Fish:
Wash the Bombil fish thoroughly and pat dry with paper towels.
Make a few horizontal slits on each piece to allow the marinade to penetrate.
Marinate the Fish:
In the bowl, mix turmeric powder, red chili powder, ginger-garlic paste, lemon juice, and salt.
Rub this marinade onto the fish pieces, ensuring they are well coated.
Set as aside to marinate for at least 30 minutes.
Prepare the Coating:
In another bowl, mix rice flour, semolina, carom seeds, and salt.
Fry the Fish:
Heat oil in a frying pan.
Coat each marinated Bombil piece with the rice flour mixture.
Shallow fry the fish on medium heat until golden brown and crispy on both sides.
Serve:
Serve the Bombil Fry hot, garnished with lemon wedges and chopped coriander.
It pairs well with steamed rice or as an appetizer.
