Ingredients:
Main Ingredients:
4 medium-sized potatoes, boiled, peeled, and cubed
2 onions, thinly sliced
2 green chilies, finely chopped
1 tsp mustard seeds
1/2 tsp turmeric powder
1/2 tsp asafoetida (hing)
1 tsp urad dal (split black gram)
1 tsp chana dal (split Bengal gram)
8-10 curry leaves
2 tbsp oil
Salt to taste
2 tbsp fresh coriander leaves, chopped for garnish
Additional Flavors:
1/2 tsp cumin seeds
1/2 tsp fennel seeds
1 tsp ginger, grated
1/2 tsp garam masala
Juice of 1/2 lemon
Instructions:
Prepare the Potatoes:
Boil the potatoes until they are tender. Let them cool, then peel and cut them into cubes.
Cook the Spices:
Heat oil in a pan. A add mustard seeds and let them splutter.
Add cumin seeds, fennel seeds, urad dal, chana dal, and asafoetida. Fry until the dals turn golden.
Add sliced onions, green chilies, curry leaves, and grated ginger. Sauté until the onions are translucent.
Add Potatoes:
Mix in turmeric powder and salt. Stir well.
Add the cubed potatoes to the pan. Gently mix, ensuring the potatoes are coated with the spices.
Cook on a low flame for 5-7 minutes, stirring occasionally.
Final Touches:
Sprinkle garam masala and lemon juice over the bhaji. Mix gently.
Garnish with chopped coriander leaves.
Serve:
Serve the Batata Bhaji hot with pooris, chapatis, or as a side dish with rice.
It can also be enjoyed as a filling for sandwiches or wraps.
