Ingredients:

500g okra (bhindi), trimmed and sliced into 1-inch pieces
2 medium onions, finely chopped
2 large tomatoes, finely chopped
1 tbsp ginger-garlic paste
2 green chilies, slit lengthwise
1/2 tsp turmeric powder
1 tsp coriander powder
1/2 tsp cumin powder
1 tsp red chili powder (adjust to taste)
1/2 tsp garam masala
Salt to taste
2 tbsp oil
Fresh coriander leaves, for garnish
Tempering:
1 tsp cumin seeds
A pinch of asafoetida (hing)
Instructions:
Prepare the Bhindi:
Rinse the bhindi and pat dry thoroughly. Cut into 1-inch pieces.
In a pan, heat 1 tbsp oil. Add bhindi and sauté until they are slightly browned and half-cooked. Remove and set aside.
Cook the Masala:
In the same pan, heat the remaining oil. Add cumin seeds and asafoetida.
A once seeds crackle, add chopped onions and sauté until golden.
A add ginger-garlic paste and green chilies, and fry for a minute.
Stir in the chopped tomatoes along with turmeric, coriander, cumin, and red chili powders. A cook until the tomatoes become soft and the oil separates.
Combine Bhindi with Masala:
Add the sautéed bhindi to the masala. Mix gently, ensuring the bhindi is well-coated with the spices.
Cover and cook on low heat for about 10 minutes, or until the bhindi is fully cooked. Stir occasionally to prevent sticking.
Final Touches:
Sprinkle garam masala and salt. Mix well.
Cook uncovered for another 2-3 minutes.
Garnish and Serve:
Garnish with freshly chopped coriander leaves.
Serve hot with roti, naan, or rice.
