Ingredients:
For the Dal:
1 cup toor dal (pigeon pea lentils)
3 cups water
1/2 teaspoon turmeric powder
For the Tadka (Tempering):
2 tablespoons oil or ghee
1 teaspoon mustard seeds
1/2 teaspoon cumin seeds
A pinch of asafoetida (hing)
2-3 dried red chilies
8-10 curry leaves
Additional Ingredients:
1 medium onion, finely chopped
1 tomato, finely chopped
1 teaspoon ginger-garlic paste
1-2 green chilies, slit
1/2 teaspoon red chili powder
1 teaspoon coriander powder
1/2 teaspoon garam masala
1-2 pieces of kokum or 1 tablespoon tamarind pulp
1 tablespoon jaggery or sugar
Salt to taste
Fresh coriander leaves for garnishing
Instructions:
Cooking the Dal:
Rinse the toor dal thoroughly and add it to a pressure cooker with 3 cups of water and turmeric powder.
Cook for 3-4 whistles or until the dal is soft and mushy. Once the pressure releases, mash the dal well and set it aside.
Preparing the Tadka:
Heat oil or ghee in a pan. Add mustard seeds and let them crackle.
A add cumin seeds, asafoetida, dried red chilies, and curry leaves. Sauté for the few seconds until aromatic.
Making the Aamti:
To the tadka, add chopped onions and sauté until they turn translucent.
A add ginger-garlic paste and green chilies. Cook for a minute.
Mix in chopped tomatoes and cook until they soften.
A add red chili powder, coriander powder, and garam masala. Stir well.
Pour in the cooked and mashed dal. Add kokum or tamarind pulp, jaggery or sugar, and salt. Mix well.
Add a water to adjust the consistency as per your preference. Bring the Aamti to a boil.
The simmer for 5-10 minutes, allowing the flavors to meld together.
Finishing Touches:
Garnish with fresh coriander leaves.
Serve hot with steamed rice or chapatis.
