Ingredients:

For the Dal:

For the Tadka (Tempering):

Instructions:

Cooking the Dal:

contents bullet arrow iconRinse the toor dal thoroughly and add it to a pressure cooker with 3 cups of water and turmeric powder. contents bullet arrow iconCook for 3-4 whistles or until the dal is soft and mushy. Once the pressure releases, mash the dal well and set it aside.

Preparing the Tadka:

contents bullet arrow iconHeat oil or ghee in a pan. Add mustard seeds and let them crackle. contents bullet arrow iconA add cumin seeds, asafoetida, dried red chilies, and curry leaves. Sauté for the few seconds until aromatic.

Making the Aamti:

contents bullet arrow iconTo the tadka, add chopped onions and sauté until they turn translucent. contents bullet arrow iconA add ginger-garlic paste and green chilies. Cook for a minute. contents bullet arrow iconMix in chopped tomatoes and cook until they soften. contents bullet arrow iconA add red chili powder, coriander powder, and garam masala. Stir well. contents bullet arrow iconPour in the cooked and mashed dal. Add kokum or tamarind pulp, jaggery or sugar, and salt. Mix well. contents bullet arrow icon Add a water to adjust the consistency as per your preference. Bring the Aamti to a boil. contents bullet arrow iconThe simmer for 5-10 minutes, allowing the flavors to meld together.

Finishing Touches:
