Ingredients:

2 cups thick yogurt (preferably chilled)
1/2 cup cold water or milk
4 tablespoons sugar (adjust to taste)
A pinch of salt
For Flavoring:
1/2 teaspoon cardamom powder
1 tablespoon rose water (for a floral hint)
A few strands of saffron (optional, soaked in 2 tablespoons warm milk)
For Garnish:
Chopped pistachios or almonds
Dried rose petals (optional)
A pinch of ground cardamom
Instructions:
Blend the Ingredients:
In a blender, combine the thick yogurt, cold water or milk, sugar, a pinch of salt, cardamom powder, and rose water. If using, also add the saffron along with its milk.
Blend until the mixture is smooth and frothy. Adjust the consistency by adding more water or milk, if necessary.
Chill (Optional):
For an extra cold Lassi, you can chill it in the refrigerator for about 15-30 minutes, or you can blend it with a few ice cubes.
Garnish and Serve:
Pour the Lassi into serving glasses.
Garnish with chopped pistachios or almonds, dried rose petals, and a sprinkle of cardamom powder.
Serve chilled.
Variations:
Mango Lassi: You can add ripe mango pulp for a fruity variation.
Salty Lassi: For a savory version, omit sugar and rose water, and add roasted cumin powder and a bit of black salt.
