Ingredients:
1 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup buttermilk
1 large egg
2 tablespoons unsalted butter, melted
1/4 cup finely chopped fresh herbs (such as chives, parsley, and dill)
1/2 cup grated cheese (optional, like cheddar or feta)
Olive oil or butter, for cooking
Instructions:
Prep Dry Ingredients: In a large bowl, whisk together flour, baking powder, baking soda, salt, and black pepper.
Combine Wet Ingredients: In another bowl, beat the egg and then mix in the buttermilk and melted butter.
Mix Together: The pour wet ingredients into the dry ingredients. A stir until just combined; it's okay if the batter is a bit lumpy.
Add Herbs and Cheese: Fold in the chopped herbs and grated cheese into the batter.
Cook Pancakes: Heat a non-stick skillet or griddle over medium heat and brush with olive oil or butter. For each pancake, pour about 1/4 cup of batter onto the skillet. A cook until bubbles form on the surface, then flip and cook until golden brown on the other side.
Serve Warm: Serve the pancakes warm with your choice of toppings like sour cream, a sprinkle of fresh herbs, or a savory jam.
