Ingredients:
1 cup Rava (semolina)
1 cup sugar
2 cups water
2 tablespoons ghee (clarified butter)
1/4 cup cashews
1/4 cup raisins
1/4 teaspoon cardamom powder
A few saffron strands (optional)
1 tablespoon chopped nuts (e.g., almonds or pistachios, optional)
Instructions:
Roast the Rava:
Heat a pan over medium flame. Add the rava and dry roast it, stirring continuously, until it turns a light golden color and releases a nutty aroma. This should take about 5 minutes. Set aside.
Prepare the Sugar Syrup:
In another pan, combine the water and sugar. Bring it to a boil, stirring occasionally until the sugar completely dissolves. If using saffron, add it to the syrup at this stage. Remove from heat and set aside.
Cook the Rava:
In the same pan used for roasting the rava, heat the ghee. Add the cashews and raisins, and fry until they turn golden brown and plump. Remove them from the pan and set aside.
Combine Ingredients:
In the same pan with the remaining ghee, add the roasted rava. Slowly pour in the hot sugar syrup while stirring continuously to prevent lumps. Cook on low heat, stirring occasionally, until the mixture thickens and starts to leave the sides of the pan.
Flavor and Garnish:
Stir in the cardamom powder and the fried cashews and raisins. Cook for an additional 2-3 minutes, ensuring everything is well combined and the mixture has a smooth, glossy texture.
Serve:
Transfer the Rava Shira to a serving dish. Garnish with chopped nuts if desired. Serve warm or at room temperature.
